At least two distinct Bacanoreros manufacture Puntagave Rustico Bacanora. Roberto Contreras, Maestro Bacanorero, in his palenque at Rancho Tepa, Aconchi, Sonora. Roberto is a fifth-generation Bacanorero who learnt the craft from his father, Don Lalo. Master Bacanorero Jorge Rivas may create more batches.This bacanora is cooked underground and then fermented in stainless steel vats for 8-10 days with wild yeasts. After that, it’s distilled twice more in copper stills.
