Juerte Destilado de Pulque is produced by Ger??nimo Rosainz. The story goes that he was told aboutdestilado de pulqueby his grandmother, but it wasn’t until he married a chemical engineer in the mid-90s that he actually began the process of learning how to produce it himself. His wife helped him procure the necessary equipment, and together they decided to re-initiate this centuries-old tradition and began selling theirdestilado de pulquein their village in northeast Tlaxcala.
The aguamiel (agave sap) of the maguey pulquero (agave Salmiana) is fermented and then distilled to make Juerte Destilado de Pulque. A big hole is cut into the top of the pia when the Salmiana reaches maturity. The natural reaction of the plant is to exude aguamiel into the hole.
