Chef Esteban Morales founded the La Venenosa Raicilla collection with the aim of introducing these hidden treasures to the world. He traveled across the state of Jalisco, searching for the finest producers in each area. Each of the Raicilla varieties in this line is exceptional; crafted by different Maestro Taberneros in distinct regions, using varied methods and species of agave, the outcomes are truly remarkable. Because of the somewhat unrefined process of Raicilla production, the ABV of each La Venenosa expressionmay vary.
Etnica is an expansion of the La Venenosa range of raicillas, designed to offer a platform for bringing agave spirits from indigenous ethnic groups to market. This particular agave spirit originates from the Huichol people of northwest Jalisco, and while we refer to it as a Raicilla on this website for convenience, it is known locally as Tutsi.
For approximately 25 years, Tutsi waslost, andtoday there is just one active producer. Tutsi is crafted using 100% wild maguey Masparillo, which is roasted in an underground wood oven. Next, the cooked agave is manually ground with mallets and undergoes natural fermentation in a rock pit. Finally, it is single-distilled using a Huichol still.
Tutsi is a very rare spirit, with only two or three 45-liter batches produced each year. It’s flavor is multifaceted with woodsy overtones mingling with citrus and mineral flavors.
